郸城县“张集熏鸡”以“色、香、味、形”四美俱全而闻名遐迩,畅销豫、鲁、苏、皖。相传,清乾隆年间,张集周姓人家得宫廷秘方研制而成。嘉庆年间,周家女婿张德立,发扬光大,名声大震。其工艺独特,以陈年循环老汤配十几味中草药精制而成,熏鸡骨酥肉烂皮裂,肥嫩爽口不油腻,色亮形美不松散,实为补阴壮阳、健脾滋胃之佳品。
相传,清乾隆年间,张集李姓人家得宫迁秘方,经营熏鸡。张集熏鸡有其独特的传统工艺。从宰杀、整形、油炸、蒸煮、抹蜜、搭色等,规范操作,十分考究。多种传统中草药为原料,使用陈年循环老汤精制而成。他们(巴斌 李强)制作的熏鸡,骨酥肉烂皮裂,肥嫩爽口不油腻,色亮形美不松散。实为补阴壮阳,健脾滋胃之佳品。
