观庙铺臭豆腐卷

观庙铺臭豆腐卷


    始于清初,为商城传统地方风味。此品制作,先用黄豆细磨精制成头薄豆腐,再卷成筒状置于特制木匣中捂闷,表面显白色茸毛后即成。成品有腐乳香,味鲜美,入菜可炒、炸、烩、焖,与鸡汤、鲜菇、蛋花等烹调成汤,滋味特佳,为他处仿制所不及。
       
    清代,观庙铺臭豆腐卷即远销京、沪、鄂、皖、川等地,咸丰年间列入宫廷御膳。至今,观庙铺仍有多家生产臭豆腐卷,以其味美价廉而盛销不衰。


 

Stinky Tofu Roll

   
    Stinky Tofu Roll in Guanmiao Town, which stems from the beginning of Qing Dynasty, is a special local product in Shangcheng County. If we want to make this delicious food by ourselves, we should grind soybeans into thin solid tofu, roll it into tubular, then muffle it in special wooden chest until it’s covered with white fuzz. Stinky tofu roll has a smell of fermented tofu and a delicious taste. It can be fried, braised and cooked soup with chicken soup, mushroom and eggs, which endows its tasty that other kinds of food can’t compete with.
      
    In Qing Dynasty, Stinky tofu roll in Guanmiao Town was sold as far as Bengjing, Shanghai, Hubei, Anhui, Sichuang, etc. It was imported into the imperial palace in Xianfeng period. Nowadays, there are still hundreds of restaurants making this stinky tofu roll in Guanmiao Town, which never decreases its yield for the delicious taste and cheep price.
