固始鹅是我国著名的地方优良鹅种，主产地是河南固始县，属白鹅类型，体型大、颈长呈弓形，头顶有圆而光滑的肉瘤，公鹅肉瘤大而突出，全身羽毛白色  ，肉瘤、嘴、腿、蹼均为橘黄色，体躯呈长方形，少数鹅颌下有咽袋。
       
    公元582年，隋炀帝车驾临江都，奏百戏之乐，宴众爱妃于赤舰船楼上，佳肴近千种，惟金华火腿与固始鹅风扫残云，新贵人张丽华食之最少，仅食一鹅腿，余菜无问津。无独有偶，据《中国秘史大全》记载，公元679年，唐代著名诗人骆宾王因反对武则天丢官回闽南，途径固始，乡秀陈元光宴骆宾王于固始城关东门楼，元光献汗鹅块与其对酌，酒甘鹅尽，骆宾王望着城楼下史河中群鹅戏水，诗兴大发，吟起了“鹅，鹅，鹅，曲项向天歌……”陈元光后来主政漳州，将此诗传诵，留芳于世。 　　
      
    上述典故的真伪我们暂不去考证，但说明了一个事实，固始鹅与金华火腿至少从隋朝时就同时驰名天下，由于诗人的渲染，固始鹅还名重于金华火腿。 　　
       
    鹅最名贵者，乃河南固始之鹅。固始人以饭饲之食，所以那里的鹅最肥，平时都在野外放养，吃的草、虫，这些与圈养的鹅不一样， 当然这些鹅做出来的味道也不一样。如今不仅在河南本地很火，大到市集小到乡镇都很流行，甚至现在北京都能看到很多的固始鹅块火锅店。


 

Gushi Gooses

    Gushi goose is a good local kind of gooses in China, which is mainly produced in Gushi town. This kind of gooses have big shapes, long and arched-shaped necks, round and smooth sarcoids on the top of heads especially of male gooses, white feathers all over the body, orange sarcoids, mouths and legs, and rectangle bodies. A few gooses have pharynx bag below jaws. Among all kinds of gooses, Gushi Gooses are the most precious. Local people feed them rice so that they become the fattest and raise them wildly to make sure they can eat some natural worms and insects so that they have a unique taste.
