尉氏青豆产于开封所属的尉氏县,简称尉青,又称尉青豆。
据明嘉靖《尉氏县志》记载,当时尉氏就已大面积种植青豆清末到建国初,每逢中秋节过后,大批港澳商人纷纷前来采购。建国初期,年出口量达七、八百吨,远销港、澳、美国、西德。加拿大等30多个国家和地区,六十年代后,压缩种植面积,中断了出口,80年代开始扩大种植面积,使尉氏青豆重返国际市场,出口量达到历史最高水平。1983年还曾荣获国家外经?Q部?C发的荣誉证书。
尉氏青豆豆料结实,大小匀称,色泽青绿,表面光润,人称‘碧玉翠珠’。该豆特征是豆胚部外围有一墨圈,中间有一雪白点,称为白门。据测定,尉氏青豆含有蛋白质、脂肪和多种维生素,其蛋白质含量高达43%,居各类品种之首,是制作各种豆制的理想原料。用其制作的的豆腐、豆腐脑、腐竹等营养食品质地细腻,味首清香,而且对胃中积热。小便不利等症状具有一定疗效,用尉氏青豆做成的菜肴是酒席宴会中的美味佳品。
Weishi Green Beans
Weishi green beans are produced in Weishi County in Kaifeng City. According to Weishi County Record, large area had been planted green beans in Jiajing period in Ming Dynasty. Its productions have sold into more than 30 countries and regions like Hong Kong, Macao, America, West Germany, etc.
Weishi green beans are hard, well-balanced, green, gloosy and are praised as jaspers. According to researches, these beans contain rich nutrition, among which protein content ranks at the top of the similar products. Thus, they are ideal materials to make all kinds of bean products.
